Sweet Potato Pie Recipe

This is the perfect healthy comfort food recipe. It is fantastic because it is high in protein and fibre. Which are great macronutrients that help to keep you fuller for longer periods of time. I also used sweet potato as an alternative to white potato’s as they are a complex slow digesting carbohydrate and as it is boiled it is also significantly low in GI.

For this recipe you will need:

  • Turkey mince 7% fat.

  • 1/2 an onion

  • 2 large sweet potato’s

  • 3 tiny white potato’s

  • 1 teaspoon of salted butter

  • 3 tablespoons of tomato paste

  • 1 canned tomato

  • 1 canned kidney beans

  • 1 pack of tiny mushrooms

  • 1/2 red pepper

  • 1/4 of a bag of mixed veggies

  • 1 teaspoon of mixed herbs

  • 1/2 teaspoon of white and black pepper

  • 1 garlic clove

  • 1 scotch bonnet or half dependent on how spicy you’d like it.

Directions:

  1. Start off by preparing your potato’s. Remove all the skin and cut into small chunks. Put it in a pot and cook until really soft. For approximately 25 minutes on medium-low heat.

  2. Whilst that is cooking, heat some oil in a pan. Once it is hot, add the onions and fry for 1-2 minutes. Then add the turkey mince and fry until brown. Take it out and place to the side.

  3. Once removed, add another dash of oil and fry the tomato paste, then add your chopped up mushrooms and fry also.

  4. Now add your tinned tomatoes. (Ideally blended With the scotch bonnet, garlic and red pepper but if you can’t blend just chop it up really small), kidney beans, cooked turkey mince into the pot. Mix together and allow to cook for 10 minutes

  5. Next, add your mixed veggies, mixed herbs, white and black pepper, a dash of salt and allow to simmer for 15 minutes, occasionally checking and stirring.

  6. Next drain your potato’s, leaving a tiny bit of the water, add the butter, dashing of salt, dashing of black pepper and a dashing of garlic and mash to your taste

  7. Once the filling is done, pour into a baking dish and flatten out. Then add your mash potato’s and spread it out using a fork (or whatever you wish). Now sprinkle sprinkle sprinkle some mozzarella cheese on top and bake until brown

  8. Now it is done, leave to stand for 10 minutes and serve with whatever greens of your choice. Enjoy!
