Let’s kick this off with one of my favourite recipes to meal prep. Quick and super easy. For the chicken kebabs I recommend used skinless chicken thighs as their more flavourful and less dry. But I’ve also had it with chicken breast and it is also nice.
Servings: 4 – 6 (depending how much you eat)
Prep time: 15 minutes
Cooking time: 40 minutes
Total time: 55 minutes.
You will need:
Diced Chicken breast (you can also use skinless chicken things).
Spinach
Baby plum tomatoes
Feta cheese
Crushed walnuts
Diced cucumber
1 crushed garlic clove, 3 tablespoons of olive oil, half a lemon (for the salad dressing)
Brown rice.
200ml of Tomato Blended, 1 garlic clove, 1 scotch bonnet, 1/2 a red pepper.
Smoked Paprika
Greek yoghurt

Powdered garlic
Start by mixing the sea salt, Greek yoghurt, Caribbean curry powder, granulated garlic powder, and morajame In a bowl. Then layer the chicken on to the skewers and drizzle the seasoning over the chicken. Cover and allow to sit overnight or at least 30 mins – 1hr if you’re stuck for time.
Whilst that marinates. Put the rice into the rice cooker, i normally add a tad bit of sea salt and a tablespoon of olive oil.
Blend 1 onion. Heat some oil in a pan and add the onion blend and fry for 2 minutes. Then add the spicy tomato mix too and fry for 5 minutes. Add salt and season to your taste. Allow to fry for 15 minutes turning occasionally. During this add your chicken skewers into the grill (or oven if you don’t have a grill) and cook for 25-30 minutes.
once that’s done leave to the side and move onto your salad. Use as much spinach as you’d like, cut the baby tomato’s in to half’s, add the diced cucumber, crushed walnuts and feta cheese. Drizzle your homemade salad dressing and Mix together. Sprinkle some sea Sesame seeds and place to the side.
once the chicken is cooked, plate, the rice, skewers, spicy tomato sauce and salad and enjoy!
